In our own breeding farm in NRW, we place the utmost importance on excellent genetics, species-appropriate husbandry, and loving care to produce meat of exceptional quality. But what makes Wagyu beef so special?

The special properties of Wagyu beef

The Characteristics of Wagyu beef set new standards in cattle breeding. Particularly the intramuscular fat, also known as marbling, gives the meat its unique texture. This fat is rich in omega-3 and omega-6 fatty acids as well as unsaturated fatty acids, that are not only healthy, but also positively influence the taste.

The low melting point of the fat, which in our meat is around 23.9 to 24 degrees Celsius lies, ensures that Wagyu beef melts on the tongue. This creates the characteristic nutty and aromatic taste, which is globally appreciated. No other meat offers a comparable combination of tenderness, flavor, and health-promoting properties.

Genetics in Wagyu Breeding: The Key to Excellence

The Genetics of Wagyu beef is an essential foundation for its exceptional quality. Our breeding is based on the genetics of purebred Japanese bloodlines, which are known worldwide for their outstanding characteristics. Selective breeding guarantees above-average marbling and a genetic foundation that enables the highest meat quality.

A milestone of our breeding was the first show success at the European Wagyu Gala 2021, in which we Grand Champion title with Ivanka and the Reserve win with Elena achieved. These awards confirm our work and the high quality of our breeding animals.

Optimal conditions: rearing, feeding, and stress-free slaughter of our Wagyu cattle

The quality of Wagyu beef depends not only on genetics, but also on species-appropriate husbandry. Our cattle grow up in a stress-free environment, enjoy plenty of exercise, and receive a specially formulated diet.

Particularly noteworthy is the long lifespan of our animals. While conventional cattle are often slaughtered at just 18 to 24 months of age, our Wagyus reach an age of 36 to 44 months. This additional time allows for the optimal development of the marbling and a more intense flavor.

Another important aspect is the low-stress farm slaughter. By slaughtering directly on our farm, we minimize stress factors, which has a positive effect on the meat quality.
