At Balsters Premium Wagyu, you get exceptional Wagyu beef directly from our own breeding farm in Selm. In this FAQ, we answer the most frequently asked questions regarding ordering, shipping, minimum order value, farm shop, origin, animal welfare, as well as storage and preparation.

Ordering & Order Channels

What ordering options do I have at Balsters Premium Wagyu?

You can order from us in four ways:

  • conveniently via our Online order form,
  • with our PDF Order Form, which you can return to us by email or fax,
  • by email with your desired cuts and contact details or
  • by telephone, if you would like personal consultation.

How does ordering via the online order form work?

In the online order form, you select your desired cuts and quantities. Billing is based on the exact weight: After submitting the form, you will receive an order confirmation from us containing the exact weights and the corresponding invoice. Once payment is received, we ship your Wagyu beef frozen via express delivery straight to your home.

Can I order by phone with you?

Yes, you can also place your order by phone. Especially if you are ordering from us for the first time or have questions about cuts and preparation, we are happy to advise you personally and take your order directly over the phone.

How does ordering via PDF order form work?

Download our order form as a PDF, fill it out at your leisure, and then send it back.

We are reviewing your order, will contact you if we have any questions, and will send you an order confirmation with exact gram quantities and an invoice.

Can I just send an email with my order?

Yes, you can also place your order informally by email. Please include the following:

  • desired products and quantities
  • Your billing and shipping address
  • a telephone number for inquiries

We are reviewing your order and will then send you the order confirmation and invoice.

Do I need to be a regular customer to use the online form?

No. Both regular customers and new customers can use the online order form.

This is my first time ordering – what is the best way to proceed?

If you are ordering from us for the first time, you can either use the online form directly or call us. Over the phone, we will advise you personally, explain the different cuts, and help you find the right pieces and quantities for your occasion.

Can I still change my order afterwards?

Yes, as long as the meat has not yet been packaged, you can add to or change your order as you wish. Please contact us by phone or email as early as possible so that we can still accommodate the adjustment.

Can I cancel my order? If so, until when?

Cancellation is generally possible as long as the parcel service has not yet been commissioned for your order. As soon as shipping has been initiated or the parcel has been handed over to the parcel service, a cancellation is unfortunately no longer possible. Therefore, please contact us as early as possible if you wish to cancel.

Can I also order just a gift card without buying meat?

Yes. In our order form you will find Value vouchers from €25, which you can buy independently of a meat order. Shipping for the voucher is already included in the price.

Products, Range & Availability

Are all cuts listed in the form available at all times?

No. Our assortment depends on the current slaughter and availability. It can happen that individual steaks or special cuts are temporarily unavailable.

What happens if a desired cut is not available?

Should a cut you requested not be available, we will contact you, suggest suitable alternatives, or offer you a reservation for the next slaughter.

What does „gram-precise billing“ mean exactly?

The prices in the form refer to the price per kilogram or typical portion sizes. Cutting the meat always results in slight differences in weight. We weigh each piece precisely and charge you only for the actual weight. With the order confirmation, you will receive the exact gram measurements and the final total price.

Why are there only approximate grammage figures in the form?

The specified weights serve as guidelines for typical portion sizes. Due to artisanal cutting, the actual weights may vary slightly – which is why we bill by the exact gram and will inform you of the exact amount in the order confirmation.

What are „special pieces“ and why are they only available in limited quantities?

Special cuts are particularly rare cuts that usually occur only once or twice per slaughter (e.g., Balster cut, spider steak, lagarto, onglet, or the butcher's cut). Their size varies and they can only be ordered as half or whole pieces. Therefore, these cuts are only available in limited quantities.

What does „Private Selection“ mean for certain steaks?

These steaks are hand-selected and feature a particularly strong marbling. Depending on the animal and the cut, the availability of these exclusive cuts can vary greatly. We offer this differentiation for the Denver, Flat Iron, Rib-Eye, and Roastbeef/Rumpsteak cuts.

How many Wagyu steaks are included in a tasting pack?

The sampler packs combine several different pieces and products.
Examples from the current assortment:

  • „Gaumenschmaus“ Trial Pack:
    Bacon, burger patties, breakfast sausages, fat, flat iron, ball steak, and minced meat – ideal for getting to know different products.
  • „Premium Steak Edition“ sample pack:
    a selection of various steaks (e.g. rump steak, Denver steak, top round steak, Sierra cut, sirloin steak, skirt steak, New York strip, teppanyaki, teres major – depending on current availability).

The respective included products are listed in detail on the order form.

Can I exchange individual products from a sample pack?

Actually, the contents of the trial packs are fixed. However, if you have a special request or an allergy, please feel free to contact us – we usually find a solution.

Is there a minimum quantity per cut that I need to order?

The smallest standard steak we offer is approximately 180 g. If you have any special requests regarding the weight or thickness of a steak, we can accommodate them at the next slaughter.

Can I also order larger quantities for events or gastronomy?

Yes, of course. Please feel free to contact us about this – we will advise you on suitable cuts, quantities, and delivery options.

Can I request special cuts or custom orders?

Yes. Just like with the steaks, special requests for all other cuts can also be accommodated during the next butchering. Our butcher will then try to fulfill your requests as best as possible.

Pricing, Payment & Shipping

Why do prices vary so much depending on the cut?

The price depends, among other things, on how rare a cut is per animal (e.g., tenderloin vs. goulash), how sought-after it is, and what it is best suited for. Particularly tender and heavily marbled steaks, as well as rare specialty cuts, are correspondingly higher priced than classics for braising or ground meat.

How exactly is the final price of my order calculated?

Every cut has a price per kilogram. During cutting, the actual weight of each piece is determined and multiplied by the price per kilogram. The final price of your order is calculated from the sum of all weighed pieces. You will receive this precise breakdown by weight with your order confirmation and invoice.

What payment methods do you offer?

You can pay with us in cash, by bank transfer, via PayPal, or by card payment (depending on the ordering method and agreement).

When will I receive my invoice?

After we have checked your order and determined the exact weights, you will receive an order confirmation including invoice by email.

Do I have to pay in advance?

Yes. Shipping takes place after receipt of payment. As soon as your payment is received, we will send your package via express shipping.

Will I receive an order confirmation after placing my order?

Yes, upon receipt of your order, you will receive an order confirmation containing all ordered products, the exact gram quantities, and your invoice.

Do the quoted prices already include all taxes?

Yes, all prices include 7 % value-added tax.

Are there discounts for larger orders?

Please feel free to contact us if you would like to order larger quantities. Depending on the size of the order, we can provide you with an individual quote.

Do you regularly offer promotions or deals?

Yes, there are always seasonal promotions – for example, discount campaigns in the farm shop or special offers around holidays. In addition, newsletter subscribers receive a €10 discount on their first order (with a minimum order value of €99).

Minimum order value, shipping & delivery

Is there a minimum order value?

Yes, the minimum order value for delivery orders is 99 €.

How much are the shipping costs?

For an order value of up to €249, we charge €29.90 shipping costs.

From what order value is shipping free?

Orders of €249 or more include free Free shipping for you.

Where do you deliver? Do you deliver throughout Germany?

Yes, we deliver nationwide. Only on German islands might it be difficult or lead to deviations in shipping methods and costs. Please contact us personally in this case.

Which shipping service providers do you use?

Currently we ship with GO! Express.

How long does shipping take after I have paid?

After receipt of payment, we will ship your meat frozen by express. The date will be coordinated with you. Delivery on the agreed day is usually between 8:00 AM and 12:00 PM.

On which days do you ship?

Generally, we ship from Monday to Wednesday.

Can I specify a preferred delivery date?

Yes, that is possible. For Saturday delivery, the current shipping surcharge is €15. We will coordinate your requested date with you in detail.

What happens if I am not at home when the delivery arrives?

By prior arrangement, the package can be left with a neighbor, for example. Please let us know your preferences in good time so that we can pass them on to the delivery person.

Is the meat guaranteed to stay frozen during shipping?

We ship the Wagyu beef frozen and via express delivery. It is packaged to maintain the cold chain as best as possible during transport, ensuring your meat arrives in perfect condition.

How is the meat packaged and refrigerated?

The meat is vacuum-packed, fresh or frozen, and shipped for express delivery in insulated packaging with suitable cooling so that the temperature and quality remain stable during transport.

Can I also pick up the order directly from your farm?

Yes. At our farm store, you can buy Wagyu beef directly from us on-site—some of it fresh in the first few days after processing, and the rest frozen.

Are there differences between farm shop pickup and mail-order delivery?

In the farm shop, you benefit from personal advice and special on-site offers. You can also see the Wagyu's living conditions for yourself. I would be happy to answer all your questions about Wagyu in a personal conversation – from the uniqueness of the breed to the optimal preparation of the meat.

When ordering for delivery, you conveniently select your products from home and have your meat delivered frozen by express directly to your doorstep.

Quality, Origin & Animal Welfare

Where does the Wagyu beef that I order from you come from?

Our Wagyu beef comes from our own breeding farm in Selm (North Rhine-Westphalia). The animals are kept on our family farm and are also slaughtered there.

Are the animals kept on your farm?

Yes. The Wagyu herd lives directly on and around our farm, on lush pastures in the Münsterland/Ruhr region.

How are the animals kept?

Our Wagyu cattle are raised on a family-run farm with plenty of space, pasture access, and homegrown feed. The focus is on species-appropriate, low-stress rearing with plenty of tranquility so that the exceptional meat quality and fine marbling can develop optimally.

What does „stress-free farm slaughter“ mean?

The slaughter takes place directly on the farm in the familiar environment of the barn. This means no long transport routes and no transport stress for the animals – an important factor for animal welfare and meat quality.

Do you have certifications or awards?

Yes.

  • At German Wagyu Meat Contest 2025/26 we achieved 2nd place in the „Fullblood up to 40 months“ category.
  • Furthermore, our rump steak was at German Wagyu Beef Contest 2024/25 awarded the platinum plaque as the best rump steak among 23 submitted steaks.

How does your Wagyu differ from „normal“ beef?

Wagyu beef is characterized by a particularly fine marbling with intramuscular fat, a buttery-nutty flavor, and exceptional tenderness. In addition, it features a favorable fatty acid profile with a high proportion of omega-3 and omega-6 fatty acids—all of which makes it significantly more flavorful and tender than conventional beef.

Shelf life, storage & preparation

In what condition will I receive the meat—fresh or frozen?

  • Mail-order deliveries are generally sent frozen via express delivery.
  • In the farm shop, you can get the meat fresh in the first few days after processing; afterwards, it is frozen and can be taken away.

How long can the meat be kept frozen?

The shelf life of the respective meat cut is indicated on the label. With continuous storage at a minimum of −18 °C, it is generally about one year from the time of butchering.

How should I store the meat after delivery?

We recommend storing the meat upon receipt either directly in the freezer at a minimum of −18 °C or – if you plan to prepare it soon – keeping it in the refrigerator until preparation.

How is the best way to thaw Wagyu beef?

The most gentle way to thaw Wagyu beef is in the refrigerator:

  • Leave the meat in the vacuum bag in the refrigerator for several hours (preferably overnight).
  • let rest at room temperature for 30–60 minutes before preparation

Can I refreeze the meat after thawing?

For quality and safety reasons, we recommend thawed meat not to freeze again. Once thawed, it should be prepared within 1–2 days.

Is there a recommended maturation or resting period after thawing?

After thawing in the refrigerator, the meat can rest for another day. Before frying or grilling, we recommend taking it out of the refrigerator in advance so that it slightly reaches room temperature – this way it cooks more evenly.

Do you have any recommendations for cooking Wagyu steaks?

Yes—a few basic rules:

  • Pat the steaks dry thoroughly before frying or cooking them.
  • Sear it over very high heat in a skillet or on the grill to develop a nice crust.
  • Because of the high marbling, it's best not to overcook it, and let the meat rest for a few minutes after cooking.

What internal temperature do you recommend for Wagyu steaks?

Depending on the desired level of doneness, e.g.:

  • rareca. 50–52 °C
  • medium rare: approx. 53–55 °C
  • medium: approx. 56–58 °C

Most often, the distinctive marbling occurs in medium rare shows it off best.

Is your Wagyu beef also suitable for smoking, barbecuing, or "low and slow" cooking?

Yes. Especially cuts from the „roasting/braising/grilling“ category—such as roast beef, short ribs, beef hammer, or Tafelspitz—are very well suited for smoking and low-and-slow cooking.

Are certain cuts better suited for grilling, pan-frying, or braising?

Yes:

  • Grill / Skillet: Steaks such as ribeye, rump steak, filet, picanha, flat iron, Denver, etc.
  • Braising / Low & Slow: Roast beef pieces, goulash, oxtail, shank, short ribs, beef hammer.
  • Quick Meals: Sliced meat, minced meat, burger patties, bratwursts.

Farm Store & On-Site Purchases

Can I also buy the Wagyu beef directly from your farm store?

Yes. At our farm store in Selm, located at Buxfort 8, you can buy Wagyu beef right on the spot and get personalized advice.

When is the farm store open?

Our farm stand is usually open:

  • Fridays: 3:00 p.m. – 6:00 p.m.
  • Saturdays: 10:00 a.m. – 1:00 p.m.
  • and after by telephone agreement.

Do I need to place an order in advance to visit the farm stand?

Advance orders are not required. However, if you would like specific cuts or larger quantities, we recommend giving us a quick call or sending an email to check if everything is in stock.

Does the farm store carry the same selection as the online store?

The assortment is similar, but may vary depending on slaughter and sales. Some cuts are only available in limited quantities, so there may be differences between the online order form and the farm shop.

Can I also get sample packs or special items at the farm stand?
